Key Characteristics

Origin and Production

Source: Ya Shi Xiang is one of the many single-bush (Dancong) oolongs from the Fenghuang region, known for its distinctive and aromatic tea varieties.  The name "Ya Shi Xiang" was supposedly given to this tea to deter people from taking the bushes, but the name has become a mark of quality and curiosity.

Processing: After harvesting, the leaves undergo traditional processing methods including withering, tossing, partial oxidation, rolling, and drying.  The resulting tea is then concentrated into a liquid form to capture its rich essence.

Flavor and Aroma

Flavor: The concentrate embodies the tea’s complex flavor, which is typically floral with honeyed sweetness, hints of fruit, and a slight mineral undertone.  It has a smooth, rich taste that lingers on the palate.

Aroma: Known for its distinctive floral fragrance, the concentrate offers a sweet, orchid-like aroma with hints of almond, apricot, and magnolia.

Health Benefits

1. Rich in Antioxidants

Catechins and Polyphenols: Like other oolongs, Ya Shi Xiang Dancong is rich in catechins and polyphenols, which are powerful antioxidants that help fight free radicals, reduce inflammation, and protect against chronic diseases.

2. Supports Digestive Health

Gut Health: Oolong tea can promote healthy digestion and soothe the stomach.  It is often consumed after meals to aid digestion and reduce bloating.

Standard Production Processes

1. Harvesting: Tea leaves are carefully hand-picked or machine-harvested, depending on the type of tea and the desired quality.

2. Withering: The freshly harvested tea leaves are spread out in a well-ventilated area to remove excess moisture. This step helps in reducing the water content and initiating enzymatic reactions.

3. Rolling:The withered leaves are rolled to break the cell walls and release the essential oils, which contribute to the flavor and aroma of the tea. This step is typically done using rolling machines or by hand.

4. Drying:The rolled leaves are then dried to halt the enzymatic reactions and remove any remaining moisture. This step can be accomplished through various methods like air drying, pan-firing, or machine drying.

5. Grinding:Once the leaves are completely dried, they are ground into a fine powder. This can be done using stone mills, ball mills, or other grinding equipment. The grinding process helps in breaking down the tea leaves into small particles, resulting in tea powder.
